Crafted from White Steel #1, the same steel originally used to forge Japanese swords, then finished with your choice of charred Walnut, American Walnut or European Oak. Unlike other traditional Japanese chef’s knives, Hinoki incorporates modern designs and thinking. The blade follows the traditional Gyuto shape but incorporates a broken, tapered tip and an angled double-beveled chin making this blade smoother to use and strike. The subtle angles incorporated into the handle are more ergonomic, especially the short bevel where the handle meets the bolster. For added protection during storage, Hinoki offers an optional companion leather sheath.
